I made lasagna for Roger this week. Since he has a sensitivity to gluten, traditional lasagna noodles wouldn't work. I made my homemade sauce (it takes three hours to cook, but is so worth it) and roasted thin slices of eggplant. I made a base of polenta for the pan. I layered sauce, ricotta cheese, eggplant and more cheese in the pan. I topped it with fresh mozzarella. Yummy! I didn't miss the noodles. It makes at least 3 meals in this pan. We really enjoyed Roger's Lasagna. I eagerly await the challenge of more dishes that are Roger friendly. I love to cook, for Roger and for me!
